Shrimp Tortellini

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound cheese tortellini
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of water and cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1 minute.
  3. Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Pour in the white wine and let it simmer for 2 minutes.
  6. Return the shrimp to the skillet, add the cooked tortellini, and toss everything together.
  7. Stir in the fresh basil and season with salt and pepper.
  8. Serve the shrimp tortellini hot, garnished with additional basil if desired.
