Shrimp Tortellini

Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound cheese tortellini
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup white wine
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Boil a large pot of water and cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1 minute.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Pour in the white wine and let it simmer for 2 minutes.
- Return the shrimp to the skillet, add the cooked tortellini, and toss everything together.
- Stir in the fresh basil and season with salt and pepper.
- Serve the shrimp tortellini hot, garnished with additional basil if desired.
