Ingredients

  • 1 whole duck, chopped into pieces
  • 500g yam, peeled and cut into chunks
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add the duck pieces. Cook until browned on all sides.
  2. Add ginger and garlic to the pot, and stir for 1-2 minutes.
  3. Pour in the soy sauce, oyster sauce, Shaoxing wine, and sugar. Stir to coat the duck evenly.
  4. Add the yam chunks and chicken broth to the pot. Bring to a boil, then reduce heat to low and simmer for 1.5 hours, or until the duck is tender.
  5. Season with salt and pepper to taste before serving.
