Ingredients

  • 1 lb white fish fillets, such as cod or haddock
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 2 cups fish or vegetable broth
  • 1/2 cup white wine
  • 2 tbsp tomato paste
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and bell pepper until softened.
  2. Add the potatoes, tomatoes, broth, white wine, and tomato paste to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Add the fish fillets to the pot and sprinkle with paprika, salt, and pepper. Simmer for an additional 15-20 minutes, or until the fish is cooked through.
  4. Serve the Shuba hot, garnished with fresh herbs if desired.
