Shuba (odessa Fisherman's Stew)
Shuba, also known as Odessa Fisherman's Stew, is a traditional dish from Cossack cuisine that is rich in flavor and history. This hearty stew is perfect for a cozy night in or for entertaining guests with a taste of authentic Cossack cuisine.
Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, cubed
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 2 cups fish or vegetable broth
- 1/2 cup white wine
- 2 tbsp tomato paste
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and bell pepper until softened.
- Add the potatoes, tomatoes, broth, white wine, and tomato paste to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the fish fillets to the pot and sprinkle with paprika, salt, and pepper. Simmer for an additional 15-20 minutes, or until the fish is cooked through.
- Serve the Shuba hot, garnished with fresh herbs if desired.
