Shurbo, also known as Tangy Tomato Soup, is a traditional Tajik dish that is perfect for warming up on a cold day. This flavorful soup is made with simple ingredients and is easy to prepare.
Ingredients
- 4 large tomatoes, chopped
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the chopped tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 15-20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Adjust the seasoning if needed and serve hot, garnished with fresh cilantro.
