Ingredients

  • 4 large tomatoes, chopped
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the chopped tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 15-20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Adjust the seasoning if needed and serve hot, garnished with fresh cilantro.
