Shurpa (spiced Beef And Lentil Stew)

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 1 cup dried lentils
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 8 cups beef or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown the beef stew meat over medium-high heat.
  2. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  3. Stir in the ground cumin, paprika, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes to toast the spices.
  4. Add the dried lentils, carrots, and potatoes to the pot.
  5. Pour in the beef or vegetable broth and bring the stew to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 1.5-2 hours, or until the beef is tender and the lentils are cooked through.
  7. Season with salt and pepper to taste.
  8. Serve the shurpa hot, garnished with fresh cilantro.
