Shurpa (spiced Beef And Lentil Stew)
Shurpa is a traditional Uzbek beef and lentil stew that is packed with warm spices and hearty flavors. This comforting dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1.5 lbs beef stew meat, cubed
- 1 cup dried lentils
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 8 cups beef or vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the beef stew meat over medium-high heat.
- Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Stir in the ground cumin, paprika, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes to toast the spices.
- Add the dried lentils, carrots, and potatoes to the pot.
- Pour in the beef or vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1.5-2 hours, or until the beef is tender and the lentils are cooked through.
- Season with salt and pepper to taste.
- Serve the shurpa hot, garnished with fresh cilantro.
