Shurpa (spiced Beef And Potato Stew)
Shurpa is a traditional Uzbek beef and potato stew that is rich in flavors and spices. This hearty dish is perfect for warming up during the cold winter months.
Ingredients
- 1 lb beef, cut into cubes
- 2 onions, chopped
- 3 potatoes, peeled and cubed
- 2 carrots, sliced
- 3 tomatoes, chopped
- 4 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground black pepper
- 1/4 tsp cayenne pepper
- 6 cups beef broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onions and garlic, and sauté until fragrant.
- Stir in the cumin, paprika, coriander, black pepper, and cayenne pepper.
- Add the tomatoes, bell pepper, carrots, and potatoes to the pot.
- Pour in the beef broth and bring the stew to a boil.
- Reduce the heat, cover, and simmer for 1 hour, or until the beef and vegetables are tender.
- Season with salt to taste.
- Serve the shurpa hot, garnished with fresh cilantro.
