Shurpa (spiced Beef And Spinach Stew)
Shurpa is a traditional Uzbek beef and spinach stew that is rich in flavor and hearty in texture. This comforting dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1.5 lbs beef, cut into chunks
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 4 cups beef broth
- 1 cup chopped tomatoes
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 4 cups fresh spinach
- 2 tbsp chopped fresh cilantro
Instructions
- In a large pot, brown the beef chunks over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Stir in the sliced carrots, diced potatoes, and chopped bell pepper.
- Pour in the beef broth and chopped tomatoes, then add the ground cumin, paprika, ground coriander, cayenne pepper, salt, and pepper.
- Cover the pot and let the stew simmer for 1.5 hours, or until the beef is tender.
- Add the fresh spinach and chopped cilantro, and cook for an additional 10 minutes.
- Adjust the seasoning if needed, then serve the shurpa hot.
