Shurpa (spiced Beef And Spinach Stew)

Ingredients

  • 1.5 lbs beef, cut into chunks
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 4 cups beef broth
  • 1 cup chopped tomatoes
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 cups fresh spinach
  • 2 tbsp chopped fresh cilantro

Instructions

  1. In a large pot, brown the beef chunks over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Stir in the sliced carrots, diced potatoes, and chopped bell pepper.
  4. Pour in the beef broth and chopped tomatoes, then add the ground cumin, paprika, ground coriander, cayenne pepper, salt, and pepper.
  5. Cover the pot and let the stew simmer for 1.5 hours, or until the beef is tender.
  6. Add the fresh spinach and chopped cilantro, and cook for an additional 10 minutes.
  7. Adjust the seasoning if needed, then serve the shurpa hot.
