Shurpa (spiced Lamb And Potato Stew)

Ingredients

  • 1 kg lamb, cut into chunks
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 large potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 tomato, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 6 cups beef or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the onions and garlic, and sauté until fragrant.
  3. Stir in the potatoes, carrots, bell pepper, and tomato.
  4. Season with cumin, paprika, coriander, and cayenne pepper.
  5. Pour in the broth and bring the stew to a boil.
  6. Reduce the heat, cover, and simmer for 1.5 hours, or until the lamb is tender.
  7. Season with salt and pepper to taste.
  8. Serve the shurpa hot, garnished with fresh cilantro.
