Shurpa (spiced Lamb And Potato Stew)

Ingredients
- 1 kg lamb, cut into chunks
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 large potatoes, peeled and cubed
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 tomato, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- 6 cups beef or vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the onions and garlic, and sauté until fragrant.
- Stir in the potatoes, carrots, bell pepper, and tomato.
- Season with cumin, paprika, coriander, and cayenne pepper.
- Pour in the broth and bring the stew to a boil.
- Reduce the heat, cover, and simmer for 1.5 hours, or until the lamb is tender.
- Season with salt and pepper to taste.
- Serve the shurpa hot, garnished with fresh cilantro.
