Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 bell pepper, chopped
  • 4 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 6 cups beef broth
  • 2 cups water
  • 1/4 cup lemon juice
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef over medium-high heat for 5-7 minutes.
  2. Add the onions and garlic, and cook for another 3-4 minutes until softened.
  3. Stir in the carrots, potatoes, bell pepper, and tomatoes. Cook for 5 minutes.
  4. Pour in the beef broth, water, lemon juice, cumin, paprika, coriander, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the beef is tender.
  5. Stir in the fresh cilantro and parsley. Cook for an additional 5 minutes.
  6. Adjust seasoning if needed, then serve hot.
