Shurpa is a traditional Uzbek beef stew that is hearty, flavorful, and perfect for warming up on a cold day. This tangy tomato-based stew is packed with tender beef, vegetables, and aromatic spices, making it a comforting and satisfying meal.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 onions, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 1 bell pepper, chopped
- 4 tomatoes, chopped
- 4 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 6 cups beef broth
- 2 cups water
- 1/4 cup lemon juice
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp ground coriander
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium-high heat for 5-7 minutes.
- Add the onions and garlic, and cook for another 3-4 minutes until softened.
- Stir in the carrots, potatoes, bell pepper, and tomatoes. Cook for 5 minutes.
- Pour in the beef broth, water, lemon juice, cumin, paprika, coriander, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the beef is tender.
- Stir in the fresh cilantro and parsley. Cook for an additional 5 minutes.
- Adjust seasoning if needed, then serve hot.
