Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 tomatoes, diced
  • 4 cups vegetable broth
  • 3 potatoes, peeled and cubed
  • 1 carrot, sliced
  • 1 bell pepper, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the tomatoes, vegetable broth, potatoes, carrot, bell pepper, paprika, and cumin.
  4. Season with salt and pepper, then bring to a boil.
  5. Reduce the heat and let the stew simmer for 45-50 minutes, or until the potatoes are tender.
  6. Garnish with fresh parsley before serving.
