Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 tomatoes, diced
- 4 cups vegetable broth
- 3 potatoes, peeled and cubed
- 1 carrot, sliced
- 1 bell pepper, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the tomatoes, vegetable broth, potatoes, carrot, bell pepper, paprika, and cumin.
- Season with salt and pepper, then bring to a boil.
- Reduce the heat and let the stew simmer for 45-50 minutes, or until the potatoes are tender.
- Garnish with fresh parsley before serving.
