Ingredients
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups fresh spinach
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the carrots, potatoes, and bell pepper, and cook for 5 minutes.
- Pour in the diced tomatoes and vegetable broth. Season with paprika, cumin, salt, and black pepper.
