Ingredients
- 1 1/2 lbs boneless lamb, cut into cubes
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp Sichuan peppercorns
- 1 tsp chili flakes
- 1 tsp sugar
- 1 cup chicken broth
- Salt to taste
Instructions
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add the lamb cubes and stir-fry until browned on all sides. Remove the lamb from the wok and set aside.
- In the same wok, add garlic, ginger, and green onions. Stir-fry for 1-2 minutes until fragrant.
- Return the lamb to the wok and add soy sauce, dark soy sauce, Shaoxing wine, Sichuan peppercorns, chili flakes, and sugar. Stir to combine.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 45-50 minutes, or until the lamb is tender.
- Season with salt to taste and serve hot.
