Ingredients

  • 1 1/2 lbs boneless lamb, cut into cubes
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp Sichuan peppercorns
  • 1 tsp chili flakes
  • 1 tsp sugar
  • 1 cup chicken broth
  • Salt to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the lamb cubes and stir-fry until browned on all sides. Remove the lamb from the wok and set aside.
  3. In the same wok, add garlic, ginger, and green onions. Stir-fry for 1-2 minutes until fragrant.
  4. Return the lamb to the wok and add soy sauce, dark soy sauce, Shaoxing wine, Sichuan peppercorns, chili flakes, and sugar. Stir to combine.
  5. Pour in the chicken broth and bring to a simmer. Cover and cook for 45-50 minutes, or until the lamb is tender.
  6. Season with salt to taste and serve hot.
