Ingredients

  • 1 1/2 lbs lamb, cut into 1-inch cubes

  • 1 tbsp Sichuan peppercorns
  • 1/2 tsp chili flakes
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped cilantro for garnish

Instructions

  1. In a dry skillet, toast the cumin seeds and Sichuan peppercorns over medium heat until fragrant, about 2 minutes. Let cool and then grind into a fine powder using a mortar and pestle or spice grinder.
  2. In a large bowl, combine the ground cumin and Sichuan peppercorn mixture, chili flakes, minced garlic, soy sauce, vegetable oil, salt, and black pepper. Add the lamb cubes and toss to coat evenly. Marinate for at least 1 hour, or overnight for best flavor.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated lamb cubes onto skewers.
  4. Heat a grill or grill pan over medium-high heat. Grill the lamb skewers for 3-4 minutes per side, or until cooked to your desired doneness.
