Ingredients

  • 1 whole duck, about 2 kg
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey
  • 1 teaspoon five-spice powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cloves garlic, minced
  • 2-inch piece ginger, sliced

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, mix together the soy sauce, hoisin sauce, honey, five-spice powder, salt, pepper, garlic, and ginger to make the marinade.
  3. Clean the duck and pat it dry with paper towels. Prick the skin of the duck with a fork to allow the fat to render while roasting.
  4. Brush the duck with the marinade, making sure to coat both the outside and inside of the duck.
  5. Place the duck on a rack in a roasting pan and roast in the preheated oven for 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
  6. Let the duck rest for 10 minutes before carving and serving.
