Si Yau Ark (roast Duck Revelation)
Si Yau Ark, or Roast Duck, is a popular dish in Singaporean Chinese cuisine, known for its crispy skin and succulent meat. This recipe will guide you through the process of making this delicious dish at home.
Ingredients
- 1 whole duck, about 2 kg
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon honey
- 1 teaspoon five-spice powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 cloves garlic, minced
- 2-inch piece ginger, sliced
Instructions
- Preheat the oven to 180°C (350°F).
- In a small bowl, mix together the soy sauce, hoisin sauce, honey, five-spice powder, salt, pepper, garlic, and ginger to make the marinade.
- Clean the duck and pat it dry with paper towels. Prick the skin of the duck with a fork to allow the fat to render while roasting.
- Brush the duck with the marinade, making sure to coat both the outside and inside of the duck.
- Place the duck on a rack in a roasting pan and roast in the preheated oven for 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
- Let the duck rest for 10 minutes before carving and serving.
