Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 tbsp Sichuan peppercorns
  • 1 head iceberg lettuce, leaves separated
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 2 green onions, thinly sliced
  • 1/4 cup peanuts, chopped

Instructions

  1. In a dry pan, toast the Sichuan peppercorns over medium heat until fragrant. Grind them into a fine powder using a mortar and pestle.
  2. Heat a pan over medium-high heat and add the chicken slices. Cook until browned and cooked through, then remove from the pan and set aside.
  3. In the same pan, add the minced garlic and cook for 1 minute. Add the ground Sichuan peppercorns, soy sauce, rice vinegar, sesame oil, and sugar. Stir to combine.
  4. Return the cooked chicken to the pan and toss to coat with the sauce. Cook for an additional 2 minutes.
  5. Fill each lettuce leaf with the Sichuan pepper chicken, then top with sliced green onions and chopped peanuts.
