Ingredients
- 1 lb chicken breast, thinly sliced
- 2 tbsp Sichuan peppercorns
- 1 head iceberg lettuce, leaves separated
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sugar
- 2 green onions, thinly sliced
- 1/4 cup peanuts, chopped
Instructions
- In a dry pan, toast the Sichuan peppercorns over medium heat until fragrant. Grind them into a fine powder using a mortar and pestle.
- Heat a pan over medium-high heat and add the chicken slices. Cook until browned and cooked through, then remove from the pan and set aside.
- In the same pan, add the minced garlic and cook for 1 minute. Add the ground Sichuan peppercorns, soy sauce, rice vinegar, sesame oil, and sugar. Stir to combine.
- Return the cooked chicken to the pan and toss to coat with the sauce. Cook for an additional 2 minutes.
- Fill each lettuce leaf with the Sichuan pepper chicken, then top with sliced green onions and chopped peanuts.
