Sichuan Pepper Shrimp Fried Rice (四川花椒虾炒饭)

Ingredients

  • 3 cups cooked white rice
  • 1/2 lb shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 1 tbsp Sichuan peppercorns
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Heat a wok or large skillet over medium-high heat. Add the Sichuan peppercorns and dry roast for 1-2 minutes until fragrant. Remove from the wok and crush the peppercorns using a mortar and pestle. Set aside.
  2. Heat 1 tbsp of vegetable oil in the same wok over high heat. Add the shrimp and stir-fry for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the wok and set aside.
  3. Heat the remaining 1 tbsp of vegetable oil in the wok. Add the minced garlic and ginger, and stir-fry for 30 seconds until fragrant.
  4. Push the garlic and ginger to one side of the wok, pour the beaten eggs into the wok, and scramble them until just set.
  5. Add the cooked rice, frozen peas and carrots, and the stir-fried shrimp to the wok. Stir-fry for 2-3 minutes, breaking up any clumps of rice.
  6. Add the soy sauce, sesame oil, and the crushed Sichuan peppercorns to the wok. Stir-fry for another 1-2 minutes until everything is well combined.
  7. Season with salt to taste and garnish with chopped green onions before serving.
