四川花椒虾炒饭 (Sichuan Pepper Shrimp Fried Rice) is a flavorful and aromatic dish that combines the numbing sensation of Sichuan peppercorns with the succulent taste of shrimp and the fragrance of fried rice. This dish is a staple in Sichuan cuisine and is perfect for a quick and satisfying meal.
Ingredients
- 3 cups cooked white rice
- 1/2 lb shrimp, peeled and deveined
- 2 tbsp vegetable oil
- 1 tbsp Sichuan peppercorns
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 eggs, beaten
- 1/2 cup frozen peas and carrots
- 3 tbsp soy sauce
- 1 tsp sesame oil
- Salt to taste
- Chopped green onions for garnish
Instructions
- Heat a wok or large skillet over medium-high heat. Add the Sichuan peppercorns and dry roast for 1-2 minutes until fragrant. Remove from the wok and crush the peppercorns using a mortar and pestle. Set aside.
- Heat 1 tbsp of vegetable oil in the same wok over high heat. Add the shrimp and stir-fry for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the wok and set aside.
- Heat the remaining 1 tbsp of vegetable oil in the wok. Add the minced garlic and ginger, and stir-fry for 30 seconds until fragrant.
- Push the garlic and ginger to one side of the wok, pour the beaten eggs into the wok, and scramble them until just set.
- Add the cooked rice, frozen peas and carrots, and the stir-fried shrimp to the wok. Stir-fry for 2-3 minutes, breaking up any clumps of rice.
- Add the soy sauce, sesame oil, and the crushed Sichuan peppercorns to the wok. Stir-fry for another 1-2 minutes until everything is well combined.
- Season with salt to taste and garnish with chopped green onions before serving.
