Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Sichuan peppercorns
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine (Chinese cooking wine)
- 1 tablespoon vegetable oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground white pepper
- 1 tablespoon chopped scallions, for garnish
- 8-10 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a small dry pan, toast the Sichuan peppercorns over low heat until fragrant, about 2-3 minutes. Let them cool, then grind them into a fine powder using a mortar and pestle or spice grinder.
- In a bowl, combine the ground Sichuan peppercorns, minced garlic, soy sauce, Shaoxing wine, vegetable oil, sugar, salt, ground ginger, and ground white pepper. Mix well to create the marinade.
- Add the peeled and deveined shrimp to the marinade, making sure they are evenly coated. Cover and refrigerate for at least 15 minutes to allow the flavors to infuse.
- Thread the marinated shrimp onto the soaked bamboo skewers, dividing them evenly.
- Heat a stovetop grill pan or skillet over medium-high heat. Cook the shrimp skewers for 2-3 minutes on each side, or until they are pink and opaque.
- Transfer the cooked shrimp skewers to a serving platter, garnish with chopped scallions, and serve hot.
