Sichuan Pepper Shrimp Skewers (四川花椒虾串)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Sichuan peppercorns
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (Chinese cooking wine)
  • 1 tablespoon vegetable oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground white pepper
  • 1 tablespoon chopped scallions, for garnish
  • 8-10 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a small dry pan, toast the Sichuan peppercorns over low heat until fragrant, about 2-3 minutes. Let them cool, then grind them into a fine powder using a mortar and pestle or spice grinder.
  2. In a bowl, combine the ground Sichuan peppercorns, minced garlic, soy sauce, Shaoxing wine, vegetable oil, sugar, salt, ground ginger, and ground white pepper. Mix well to create the marinade.
  3. Add the peeled and deveined shrimp to the marinade, making sure they are evenly coated. Cover and refrigerate for at least 15 minutes to allow the flavors to infuse.
  4. Thread the marinated shrimp onto the soaked bamboo skewers, dividing them evenly.
  5. Heat a stovetop grill pan or skillet over medium-high heat. Cook the shrimp skewers for 2-3 minutes on each side, or until they are pink and opaque.
  6. Transfer the cooked shrimp skewers to a serving platter, garnish with chopped scallions, and serve hot.
