Sichuan-Style Dan Dan Noodles (川味担担面)

Ingredients

  • 1/2 lb ground beef
  • 8 oz fresh Chinese wheat noodles
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp Chinese sesame paste
  • 1 tbsp Chinkiang vinegar
  • 1 tbsp Sichuan peppercorn oil
  • 1 tbsp chili oil
  • 1 tsp sugar
  • 1/4 cup chicken broth
  • 1/4 cup roasted peanuts, chopped

Instructions

  1. In a large pot of boiling water, cook the noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the garlic and half of the green onions, and cook until fragrant.
  3. In a small bowl, whisk together the soy sauce, sesame paste, vinegar, Sichuan peppercorn oil, chili oil, and sugar. Pour the sauce over the beef mixture and stir to combine.
  4. Add the chicken broth to the skillet and bring to a simmer. Add the cooked noodles and toss to coat in the sauce.
  5. Divide the noodles among serving bowls and garnish with the remaining green onions and chopped peanuts.
