Ingredients
- 500g chicken thighs, cut into bite-sized pieces
- 1/4 cup cornstarch
- 3 tablespoons vegetable oil
- 2 tablespoons Sichuan peppercorns
- 10-12 dried red chili peppers
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon Chinese cooking wine
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- Salt to taste
Instructions
- In a bowl, toss the chicken pieces with cornstarch until well coated.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the chicken pieces and cook until golden and crispy. Remove the chicken from the wok and set aside.
- In the same wok, add Sichuan peppercorns and dried chili peppers. Stir-fry until fragrant, then add the garlic, ginger, and green onions. Cook for another minute.
- Return the crispy chicken to the wok. Add soy sauce, cooking wine, sugar, and sesame oil. Stir-fry until the chicken is evenly coated with the sauce.
- Season with salt to taste and serve hot.
