Sichuan-style Spicy Chicken (四川辣子鸡)

Ingredients

  • 500g chicken thighs, cut into bite-sized pieces
  • 1/4 cup cornstarch
  • 3 tablespoons vegetable oil
  • 2 tablespoons Sichuan peppercorns
  • 10-12 dried red chili peppers
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese cooking wine
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • Salt to taste

Instructions

  1. In a bowl, toss the chicken pieces with cornstarch until well coated.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the chicken pieces and cook until golden and crispy. Remove the chicken from the wok and set aside.
  3. In the same wok, add Sichuan peppercorns and dried chili peppers. Stir-fry until fragrant, then add the garlic, ginger, and green onions. Cook for another minute.
  4. Return the crispy chicken to the wok. Add soy sauce, cooking wine, sugar, and sesame oil. Stir-fry until the chicken is evenly coated with the sauce.
  5. Season with salt to taste and serve hot.
