- 3 Sicilian oranges, zest and juice
- 4 eggs
- 1 cup sugar

Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, beat the eggs and sugar until pale and creamy. Gradually add the olive oil while continuing to beat the mixture.
- Stir in the orange zest and juice.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared cake pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
