Sien Savanh (lao-style Beef Stew)
Sien Savanh is a traditional Lao-style beef stew that is rich in flavor and perfect for warming up on a chilly day. This hearty stew is packed with tender beef, aromatic herbs, and savory spices, making it a comforting and satisfying dish.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 shallots, finely chopped
- 4 garlic cloves, minced
- 2 lemongrass stalks, bruised and chopped
- 1-inch piece of ginger, sliced
- 2 tomatoes, diced
- 3 cups beef broth
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp ground turmeric
- 1 tsp paprika
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the shallots, garlic, lemongrass, and ginger. Sauté until fragrant.
- Add the beef cubes and brown on all sides.
- Stir in the tomatoes, beef broth, fish sauce, soy sauce, sugar, turmeric, and paprika. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
- Adjust seasoning if needed. Serve the Sien Savanh hot, garnished with chopped cilantro.
