Sien Savanh (lao-style Beef Stew)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 shallots, finely chopped
  • 4 garlic cloves, minced
  • 2 lemongrass stalks, bruised and chopped
  • 1-inch piece of ginger, sliced
  • 2 tomatoes, diced
  • 3 cups beef broth
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the shallots, garlic, lemongrass, and ginger. Sauté until fragrant.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the tomatoes, beef broth, fish sauce, soy sauce, sugar, turmeric, and paprika. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
  5. Adjust seasoning if needed. Serve the Sien Savanh hot, garnished with chopped cilantro.
