Ingredients

  • 500g mixed mushrooms, such as button, cremini, and shiitake, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 package of store-bought pie crust (2 crusts)

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the sliced mushrooms to the skillet and cook until they release their liquid and become golden brown.
  3. Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to get rid of the raw flour taste.
  4. Pour in the vegetable broth and heavy cream, stirring constantly until the mixture thickens. Season with salt and pepper to taste. Remove from heat and let it cool.
  5. Preheat the oven to 375°F (190°C). Roll out one pie crust and line a pie dish with it. Pour the cooled mushroom filling into the crust.
  6. Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal the pie. Make a few slits in the top crust to allow steam to escape.
  7. Bake for 30-35 minutes, or until the crust is golden brown. Let it cool for a few minutes before slicing and serving.
