Sienipiirakka (finnish Mushroom Pie)
Sienipiirakka, or Finnish Mushroom Pie, is a delicious and comforting dish that is perfect for any occasion. This savory pie is filled with earthy mushrooms and creamy filling, all encased in a flaky pastry crust. It's a popular dish in Finland and is often enjoyed as a main course or as a hearty snack.
Ingredients
- 500g mixed mushrooms, such as button, cremini, and shiitake, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1/4 cup all-purpose flour
- 1 cup vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1 package of store-bought pie crust (2 crusts)
Instructions
- In a large skillet, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
- Add the sliced mushrooms to the skillet and cook until they release their liquid and become golden brown.
- Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to get rid of the raw flour taste.
- Pour in the vegetable broth and heavy cream, stirring constantly until the mixture thickens. Season with salt and pepper to taste. Remove from heat and let it cool.
- Preheat the oven to 375°F (190°C). Roll out one pie crust and line a pie dish with it. Pour the cooled mushroom filling into the crust.
- Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal the pie. Make a few slits in the top crust to allow steam to escape.
- Bake for 30-35 minutes, or until the crust is golden brown. Let it cool for a few minutes before slicing and serving.
