Sienirisotto (finnish Mushroom Risotto)
Sienirisotto, or Finnish Mushroom Risotto, is a comforting and flavorful dish that is popular in Finnish cuisine. This creamy rice dish is packed with the earthy flavors of mushrooms and is perfect for a cozy night in.
Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 lb mixed fresh mushrooms (such as cremini, shiitake, and oyster), sliced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large saucepan, heat the chicken or vegetable broth over low heat.
- In a separate large, deep skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the Arborio rice to the skillet and stir to coat the rice with the oil. Cook for 2-3 minutes until the rice becomes translucent around the edges.
- Pour in the white wine and stir until the liquid is absorbed.
- Add a ladleful of the warm broth to the rice and stir constantly until the liquid is absorbed. Continue adding the broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more.
- After about 20 minutes, when the rice is tender but still firm to the bite and the mixture is creamy, stir in the sliced mushrooms and cook for an additional 5-7 minutes.
- Remove the skillet from the heat and stir in the grated Parmesan cheese and butter. Season with salt and pepper to taste.
- Divide the sienirisotto among serving plates, garnish with chopped parsley, and serve hot.
