Sienirisotto (finnish Mushroom Risotto)

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb mixed fresh mushrooms (such as cremini, shiitake, and oyster), sliced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large saucepan, heat the chicken or vegetable broth over low heat.
  2. In a separate large, deep skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the Arborio rice to the skillet and stir to coat the rice with the oil. Cook for 2-3 minutes until the rice becomes translucent around the edges.
  4. Pour in the white wine and stir until the liquid is absorbed.
  5. Add a ladleful of the warm broth to the rice and stir constantly until the liquid is absorbed. Continue adding the broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more.
  6. After about 20 minutes, when the rice is tender but still firm to the bite and the mixture is creamy, stir in the sliced mushrooms and cook for an additional 5-7 minutes.
  7. Remove the skillet from the heat and stir in the grated Parmesan cheese and butter. Season with salt and pepper to taste.
  8. Divide the sienirisotto among serving plates, garnish with chopped parsley, and serve hot.
