Ingredients
- 4 large apples, peeled, cored, and chopped
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and diced
- 4 cups vegetable broth
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 2 tablespoons butter
- 1/2 cup heavy cream
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
- Add the chopped apples, vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream and heat the soup for an additional 5 minutes.
- Adjust seasoning to taste and serve hot.
