Silesian Beef Stroganoff (Stroganoff wołowy śląski)

Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 tablespoon all-purpose flour
  • 1/4 cup chopped fresh parsley

Instructions

  1. Season the beef slices with salt and pepper.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened. Add the garlic and mushrooms, and cook until the mushrooms are golden brown.
  4. Sprinkle the flour over the mushroom mixture and stir to combine.
  5. Pour in the beef broth and Dijon mustard, and stir to combine. Bring the mixture to a simmer.
  6. Return the beef to the skillet and simmer for 15-20 minutes, or until the beef is tender and the sauce has thickened.
  7. Stir in the sour cream and chopped parsley. Season with salt and pepper to taste.
  8. Serve the Silesian Beef Stroganoff over cooked egg noodles or rice.
