Silesian Beetroot Soup (Barszcz śląski)

Ingredients

  • 1 kg beetroots, peeled and grated
  • 1 onion, finely chopped
  • 2 carrots, grated
  • 1 celery root, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1/4 cup apple cider vinegar
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the grated beetroots, carrots, and celery root to the pot and cook for 5 minutes.
  3. Pour in the vegetable broth and add the bay leaves. Bring the soup to a boil, then reduce the heat and simmer for 45 minutes.
  4. Stir in the apple cider vinegar and season with salt and pepper to taste.
  5. Remove the bay leaves and serve the barszcz śląski hot, garnished with a dollop of sour cream if desired.
