Silesian Beetroot Soup (Barszcz śląski)
Barszcz śląski, or Silesian beetroot soup, is a traditional Polish dish that is known for its rich and tangy flavor. This hearty soup is a staple in Silesian cuisine and is often enjoyed during family gatherings and special occasions.
Ingredients
- 1 kg beetroots, peeled and grated
- 1 onion, finely chopped
- 2 carrots, grated
- 1 celery root, diced
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1/4 cup apple cider vinegar
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the grated beetroots, carrots, and celery root to the pot and cook for 5 minutes.
- Pour in the vegetable broth and add the bay leaves. Bring the soup to a boil, then reduce the heat and simmer for 45 minutes.
- Stir in the apple cider vinegar and season with salt and pepper to taste.
- Remove the bay leaves and serve the barszcz śląski hot, garnished with a dollop of sour cream if desired.
