Silesian Cheese and Spinach Pierogi (Pierogi z serem i szpinakiem śląskie)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup water
  • 1 cup cottage cheese
  • 1 cup chopped spinach, cooked and drained
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/2 cup chopped onions

Instructions

  1. In a large bowl, mix together the flour and salt. Add the egg and water, and knead until the dough is smooth. Cover and let it rest for 30 minutes.
  2. In another bowl, combine the cottage cheese, spinach, Parmesan cheese, salt, and pepper. Mix well to form the filling.
  3. Roll out the dough on a floured surface and cut out circles using a glass or cookie cutter.
  4. Place a spoonful of the cheese and spinach filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  5. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 3-4 minutes, or until they float to the surface.
  6. Heat the butter in a skillet and sauté the onions until golden. Add the boiled pierogi and cook until lightly browned.
  7. Serve the pierogi hot, with a dollop of sour cream if desired.
