Ingredients

  • 1 whole chicken, cut into pieces

  • 3 celery stalks, sliced
  • 1 bay leaf
  • 6 cups chicken broth
  • 8 oz egg noodles

Instructions

  1. In a large pot, combine the chicken pieces, onion, carrots, parsnips, leek, celery, and bay leaf.
  2. Pour in the chicken broth and bring the mixture to a boil.
  3. Reduce the heat, cover, and simmer for 45 minutes, or until the chicken is cooked through.
  4. Remove the chicken pieces from the pot and shred the meat, discarding the bones and skin.
  5. Return the shredded chicken to the pot and add the egg noodles.
  6. Cook for an additional 10 minutes, or until the noodles are tender.
  7. Season the soup with salt and pepper to taste.
  8. Serve hot and enjoy!
