Ingredients
- 1 whole chicken, cut into pieces
- 1 onion, chopped
- 2 carrots, sliced
- 2 parsnips, sliced
- 1 leek, sliced
- 3 celery stalks, sliced
- 1 bay leaf
- 6 cups chicken broth
- 8 oz egg noodles
- Salt and pepper to taste
Instructions
- In a large pot, combine the chicken pieces, onion, carrots, parsnips, leek, celery, and bay leaf.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat, cover, and simmer for 45 minutes, or until the chicken is cooked through.
- Remove the chicken pieces from the pot and shred the meat, discarding the bones and skin.
- Return the shredded chicken to the pot and add the egg noodles.
- Cook for an additional 10 minutes, or until the noodles are tender.
- Season the soup with salt and pepper to taste.
