Silesian Chicken Stew (Gulasz drobiowy śląski)
Gulasz drobiowy śląski, or Silesian Chicken Stew, is a traditional dish from the Silesian region of Poland. This hearty stew is packed with tender chicken, savory vegetables, and a rich, flavorful sauce, making it the perfect comfort food for a cozy evening meal.
Ingredients
- 1.5 lbs (700g) chicken thighs, cut into chunks
- 2 onions, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup (240ml) chicken broth
- 1 cup (240ml) dry red wine
- 2 bay leaves
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chicken chunks and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the minced garlic and tomato paste to the pot, and cook for another 2 minutes.
- Pour in the chicken broth and red wine, then return the browned chicken to the pot. Add the bay leaves, paprika, salt, and pepper. Stir to combine.
- Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1 hour, stirring occasionally, until the chicken is tender and the sauce has thickened.
- Remove the bay leaves and adjust the seasoning if needed. Serve the gulasz drobiowy śląski hot, accompanied by crusty bread or potatoes.
