Silesian Chicken Stew (Gulasz drobiowy śląski)

Ingredients

  • 1.5 lbs (700g) chicken thighs, cut into chunks
  • 2 onions, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) dry red wine
  • 2 bay leaves
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chicken chunks and brown them on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic and tomato paste to the pot, and cook for another 2 minutes.
  4. Pour in the chicken broth and red wine, then return the browned chicken to the pot. Add the bay leaves, paprika, salt, and pepper. Stir to combine.
  5. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1 hour, stirring occasionally, until the chicken is tender and the sauce has thickened.
  6. Remove the bay leaves and adjust the seasoning if needed. Serve the gulasz drobiowy śląski hot, accompanied by crusty bread or potatoes.
