Silesian Hunter's Stew (Bigos śląski)
Bigos śląski, also known as Silesian Hunter's Stew, is a traditional Polish dish that is hearty, flavorful, and perfect for colder weather. This stew is made with a variety of meats, sauerkraut, and fresh cabbage, creating a rich and satisfying meal.
Ingredients
- 1 lb pork shoulder, diced
- 1 lb beef stew meat, cubed
- 1 lb kielbasa sausage, sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 head of cabbage, shredded
- 1 lb sauerkraut, drained and rinsed
- 2 bay leaves
- 1 tsp caraway seeds
- 1 cup beef broth
- 1 cup dry red wine
- Salt and pepper to taste
Instructions
- In a large pot, brown the pork shoulder, beef stew meat, and kielbasa sausage over medium heat.
- Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Stir in the shredded cabbage and sauerkraut, then add the bay leaves, caraway seeds, beef broth, and red wine.
- Season with salt and pepper, then cover and simmer for 2 hours, stirring occasionally.
- Adjust seasoning if needed, then serve hot.
