Ingredients

Instructions
- In a large pot, melt the butter over medium heat.

- Sprinkle the flour over the onion and garlic, and stir to create a roux.
- Pour in the vegetable broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the sliced mushrooms to the pot and continue to simmer for another 10 minutes.
- Pour in the heavy cream, stir well, and let the soup simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
