Ingredients
- 3 cups all-purpose flour
- 1 cup warm water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cups chopped mushrooms
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup sour cream (for serving)
Instructions
- In a large bowl, combine the flour and salt. Gradually add the warm water and olive oil, mixing until a dough forms. Knead the dough on a floured surface until smooth. Cover and let rest for 30 minutes.
- In a skillet, sauté the onion until translucent. Add the mushrooms, black pepper, and thyme. Cook until the mushrooms are tender. Remove from heat and let cool.
- Roll out the dough on a floured surface and cut out circles using a glass or cookie cutter. Place a spoonful of the mushroom mixture in the center of each circle. Fold the dough over the filling and press the edges to seal.
- Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
- Serve the pierogi with a dollop of sour cream.
