Silesian Mushroom Sauce (Sos grzybowy śląski)
Sos grzybowy śląski, or Silesian Mushroom Sauce, is a traditional dish from the Silesian region of Poland. This rich and flavorful sauce is a staple in Silesian cuisine and is often served with meat, potatoes, or dumplings.
Ingredients
- 1/2 cup dried porcini mushrooms
- 2 cups boiling water
- 2 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup vegetable or mushroom broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Place the dried porcini mushrooms in a bowl and cover with boiling water. Let them soak for 20 minutes, then drain and chop the mushrooms.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened.
- Sprinkle the flour over the onion and garlic, and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually pour in the vegetable or mushroom broth, stirring constantly to avoid lumps.
- Add the chopped porcini mushrooms and simmer for 10 minutes, allowing the sauce to thicken.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes, then remove from heat.
- Serve the Sos grzybowy śląski over your favorite meat, potatoes, or dumplings.
