Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the pot. Cook, stirring occasionally, until the mushrooms release their liquid and start to brown, about 10 minutes.
- Sprinkle the flour over the mushrooms and stir to combine. Cook for 2-3 minutes to remove the raw flour taste.
- Pour in the vegetable or mushroom broth, stirring constantly. Bring the soup to a simmer and cook for 20 minutes, allowing the flavors to meld.
- Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
