Silesian Mushroom Soup (Zupa grzybowa śląska)

Ingredients

  • 1 lb mixed fresh mushrooms, such as cremini, shiitake, and oyster, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable or mushroom broth
  • 2 tbsp all-purpose flour
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and sliced mushrooms to the pot. Cook, stirring occasionally, until the mushrooms release their liquid and start to brown, about 10 minutes.
  3. Sprinkle the flour over the mushrooms and stir to combine. Cook for 2-3 minutes to remove the raw flour taste.
  4. Pour in the vegetable or mushroom broth, stirring constantly. Bring the soup to a simmer and cook for 20 minutes, allowing the flavors to meld.
  5. Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Serve the zupa grzybowa śląska hot, garnished with chopped fresh parsley.
