Ingredients
- 1 lb fresh mushrooms, cleaned and quartered
- 1 cup white vinegar
- 1 cup water
- 1 small onion, thinly sliced
- 3 garlic cloves, crushed
- 1 bay leaf
- 1 teaspoon whole black peppercorns
- 1 teaspoon salt
- 1 tablespoon granulated sugar
Instructions
- In a large pot, combine the vinegar, water, onion, garlic, bay leaf, peppercorns, salt, and sugar. Bring the mixture to a boil.
- Add the mushrooms to the pot and reduce the heat to a simmer. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender.
- Remove the pot from the heat and let the mushrooms cool in the brine.
- Transfer the mushrooms and brine to a clean, airtight container and refrigerate for at least 24 hours before serving.
