Ingredients

  • 150g sugar

  • 1/2 tsp vanilla extract
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. In a large pot, combine the plums, water, sugar, cinnamon stick, and ground cloves.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the plums are soft.
  3. Remove the pot from the heat and stir in the vanilla extract.
  4. Allow the soup to cool slightly, then remove the cinnamon stick.
  5. Using an immersion blender, puree the soup until smooth.
  6. Chill the soup in the refrigerator for at least 2 hours before serving.
  7. When serving, top each bowl with a dollop of sour cream if desired.
