Silesian Potato Salad (Sałatka ziemniaczana śląska)

Ingredients
- 2 lbs (900g) potatoes, peeled and diced
- 4 hard-boiled eggs, chopped
- 1 small onion, finely chopped
- 1 cup (240ml) mayonnaise
- 2 tbsp (30ml) white vinegar
- Salt and pepper to taste
Instructions
- Place the diced potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes or until the potatoes are tender. Drain and let cool.
- In a large bowl, combine the cooked potatoes, chopped eggs, and chopped onion.
- In a small bowl, mix the mayonnaise, white vinegar, salt, and pepper. Pour the dressing over the potato mixture and gently toss to coat.
- Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
