Ingredients
- 12 spring roll wrappers
- 1 cup shredded cabbage
- 1 cup julienned carrots
- 1 cup bean sprouts
- 1/2 cup sliced shiitake mushrooms
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup chopped water chestnuts
- 1/4 cup cooked vermicelli noodles
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil for frying
Instructions
- In a large bowl, combine the shredded cabbage, julienned carrots, bean sprouts, shiitake mushrooms, green onions, cilantro, water chestnuts, and vermicelli noodles.
- In a small bowl, whisk together the soy sauce, sesame oil, minced ginger, minced garlic, sugar, and black pepper. Pour this sauce over the vegetable mixture and toss to combine.
- Place a spring roll wrapper on a clean, dry surface, with one corner pointing towards you. Spoon about 2-3 tablespoons of the vegetable filling onto the bottom third of the wrapper. Fold the bottom corner over the filling, then fold in the side corners, and roll up tightly.
- Heat the vegetable oil in a large pan over medium heat. Fry the spring rolls in batches for 3-4 minutes per side, or until golden and crispy. Drain on paper towels.
- Serve the Silk Road Spring Rolls hot, with your favorite dipping sauce.
