Ingredients
- 8 large Swiss chard leaves
- 1 cup long-grain white rice
- 1 onion, finely chopped
- 1/4 cup pine nuts
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- Blanch the Swiss chard leaves in boiling water for 2 minutes, then transfer to an ice bath to cool. Pat dry with paper towels.
- In a large bowl, combine the rice, onion, pine nuts, parsley, mint, and 2 tablespoons of olive oil. Season with salt and pepper.
- Place a spoonful of the rice mixture onto each Swiss chard leaf, then fold the sides and roll up to form a secure bundle.
- Heat the remaining olive oil in a large pot over medium heat. Arrange the stuffed chard rolls in the pot, seam side down.
- Pour the vegetable broth over the rolls and bring to a simmer. Cover and cook for 30-35 minutes, or until the rice is tender and the chard is cooked through.
- Remove the stuffed chard rolls from the pot and place on a serving platter. Spoon some of the cooking liquid over the top before serving.
