Sinampalukang Manok Surprise

Ingredients

  • 1 whole chicken, cut into serving pieces
  • 8 cups water
  • 2 cups tamarind leaves
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 2 long green peppers
  • 1 cup string beans, cut into 2-inch pieces
  • 1 cup spinach
  • 3 tablespoons fish sauce
  • 1 tablespoon cooking oil
  • Salt and pepper to taste
  • 1 surprise ingredient

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the tamarind leaves and simmer for 15 minutes to extract the flavor. Remove the tamarind leaves and set aside the tamarind broth.
  3. In a separate pan, heat the cooking oil and sauté the onions and tomatoes until fragrant.
  4. Add the chicken pieces and cook until lightly browned.
  5. Pour in the tamarind broth and bring to a boil. Simmer for 30 minutes or until the chicken is tender.
  6. Add the surprise ingredient and simmer for an additional 10 minutes.
  7. Stir in the long green peppers, string beans, and fish sauce. Cook for another 5 minutes.
  8. Add the spinach and cook for 2 minutes until wilted.
  9. Season with salt and pepper to taste.
