Sindhi Bhugal Gosht (bhugal Mutton)

Ingredients

  • 500g mutton, cut into pieces
  • 2 onions, finely sliced
  • 3 tomatoes, chopped
  • 1/4 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/4 cup oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a few minutes until the raw aroma disappears.
  3. Now, add the mutton pieces and cook on high heat until they are browned on all sides.
  4. Reduce the heat, add the chopped tomatoes, yogurt, and all the dry spices. Mix well and cook for 5 minutes.
  5. Pour in 2 cups of water, cover the pan, and let the mutton cook on low heat for 1 hour or until tender.
  6. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
