Sindhi Bhugal Mutton Biryani
Sindhi Bhugal Mutton Biryani is a traditional dish from the Sindhi cuisine, known for its rich flavors and aromatic spices. This biryani is a perfect blend of tender mutton pieces, fragrant basmati rice, and a medley of spices, creating a delightful and satisfying meal.
Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes
- 2 onions, thinly sliced
- 1/2 cup yogurt
- 4 tomatoes, chopped
- 4 green chilies, slit
- 1/4 cup mint leaves
- 1/4 cup coriander leaves
- 1/4 cup ghee
- 1/4 cup oil
- 1 cinnamon stick
- 4 green cardamoms
- 4 cloves
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
Instructions
- Heat ghee and oil in a large pot. Add cinnamon, cardamoms, cloves, and cumin seeds. Sauté until fragrant.
- Add sliced onions and cook until golden brown.
- Stir in mutton pieces and cook until they are browned.
- Add tomatoes, green chilies, mint leaves, coriander leaves, red chili powder, turmeric powder, and salt. Cook for 5 minutes.
- Layer the soaked rice over the mutton mixture. Pour yogurt on top of the rice.
- Cover and cook on low heat for 30 minutes or until the mutton and rice are tender.
- Garnish with fried onions, mint leaves, and coriander leaves. Serve hot.
