Sindhi Bhugal Mutton Biryani

Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes
  • 2 onions, thinly sliced
  • 1/2 cup yogurt
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves
  • 1/4 cup ghee
  • 1/4 cup oil
  • 1 cinnamon stick
  • 4 green cardamoms
  • 4 cloves
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Instructions

  1. Heat ghee and oil in a large pot. Add cinnamon, cardamoms, cloves, and cumin seeds. Sauté until fragrant.
  2. Add sliced onions and cook until golden brown.
  3. Stir in mutton pieces and cook until they are browned.
  4. Add tomatoes, green chilies, mint leaves, coriander leaves, red chili powder, turmeric powder, and salt. Cook for 5 minutes.
  5. Layer the soaked rice over the mutton mixture. Pour yogurt on top of the rice.
  6. Cover and cook on low heat for 30 minutes or until the mutton and rice are tender.
  7. Garnish with fried onions, mint leaves, and coriander leaves. Serve hot.
