Sindhi Bhugal Mutton Enchiladas
Sindhi Bhugal Mutton Enchiladas are a delicious fusion dish that combines the flavors of Sindhi cuisine with the concept of enchiladas. The rich and spicy mutton filling wrapped in tortillas and topped with a tangy sauce is sure to be a hit at any gathering.
Ingredients
- 500g mutton, cut into small pieces
- 1 cup yogurt
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- Salt to taste
- 8-10 tortillas
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Marinate the mutton in yogurt, ginger-garlic paste, and salt for 30 minutes.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the marinated mutton and cook until the yogurt dries up and the mutton is tender.
- Stir in the tomato puree, coriander powder, red chili powder, and turmeric powder. Cook for another 10 minutes.
- Preheat the oven to 180°C (350°F).
- Take a tortilla, spoon some mutton filling in the center, sprinkle with shredded cheese, and roll it up. Place the enchiladas in a baking dish.
- Pour any remaining mutton filling over the enchiladas, sprinkle with more cheese, and bake for 15-20 minutes until the cheese is melted and bubbly.
- Garnish with fresh cilantro and serve hot.
