Sindhi Bhugal Mutton Enchiladas

Ingredients

  • 500g mutton, cut into small pieces
  • 1 cup yogurt
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 8-10 tortillas
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions

  1. Marinate the mutton in yogurt, ginger-garlic paste, and salt for 30 minutes.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add the marinated mutton and cook until the yogurt dries up and the mutton is tender.
  4. Stir in the tomato puree, coriander powder, red chili powder, and turmeric powder. Cook for another 10 minutes.
  5. Preheat the oven to 180°C (350°F).
  6. Take a tortilla, spoon some mutton filling in the center, sprinkle with shredded cheese, and roll it up. Place the enchiladas in a baking dish.
  7. Pour any remaining mutton filling over the enchiladas, sprinkle with more cheese, and bake for 15-20 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro and serve hot.
