Sindhi Kachori (سندھی کچوری)
سندھی کچوری (Sindhi Kachori) is a popular savory snack from the Muhajir Cuisine, known for its crispy and flavorful filling.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup semolina
- 1/4 cup ghee
- 1/2 tsp salt
- 1/2 tsp cumin seeds
- 1/2 tsp coriander seeds
- 1/2 tsp fennel seeds
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 cup boiled and mashed potatoes
- 1/4 cup chopped cilantro
- Oil for frying
Instructions
- In a bowl, mix the all-purpose flour, semolina, ghee, and salt. Knead into a firm dough using water. Cover and let it rest for 15 minutes.
- Meanwhile, dry roast the cumin seeds, coriander seeds, and fennel seeds. Crush them coarsely.
- Combine the crushed seeds, red chili powder, turmeric powder, mashed potatoes, and chopped cilantro to make the filling.
- Divide the dough into small balls and roll each ball into a small circle.
- Place a spoonful of the filling in the center and seal the edges to form a kachori.
- Heat oil in a pan and fry the kachoris until golden and crispy.
- Serve hot with chutney or yogurt.
