Ingredients
- 1 cup chickpea flour
- 2 cups yogurt
- 1 onion, chopped
- 1 potato, diced
- 1 cup mixed vegetables (carrots, peas, cauliflower)
- 1 tsp turmeric
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 2 tbsp oil
- Salt to taste
- 4 cups cooked rice
Instructions
- In a bowl, mix chickpea flour and yogurt to make a smooth paste.
- Heat oil in a pot and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add the mixed vegetables and diced potato. Cook for 5 minutes.
- Pour in the chickpea flour and yogurt mixture. Add turmeric, red chili powder, and salt. Stir well.
- Add 4 cups of water and let the curry simmer for 30 minutes, stirring occasionally.
- Once the curry thickens and the vegetables are cooked, remove from heat.
- Serve the Sindhi Kadhi hot with steamed rice.
