Ingredients

  • 1 cup chickpea flour
  • 2 cups yogurt
  • 1 onion, chopped
  • 1 potato, diced
  • 1 cup mixed vegetables (carrots, peas, cauliflower)
  • 1 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 2 tbsp oil
  • Salt to taste
  • 4 cups cooked rice

Instructions

  1. In a bowl, mix chickpea flour and yogurt to make a smooth paste.
  2. Heat oil in a pot and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  3. Add the mixed vegetables and diced potato. Cook for 5 minutes.
  4. Pour in the chickpea flour and yogurt mixture. Add turmeric, red chili powder, and salt. Stir well.
  5. Add 4 cups of water and let the curry simmer for 30 minutes, stirring occasionally.
  6. Once the curry thickens and the vegetables are cooked, remove from heat.
  7. Serve the Sindhi Kadhi hot with steamed rice.
