Sindhi Kadhi Idli
Sindhi Kadhi Idli is a delicious and comforting dish from the Sindhi Cuisine that combines the tangy flavors of kadhi with the softness of idli. It's a perfect blend of flavors and textures that will surely tantalize your taste buds.
Ingredients
- 1 cup gram flour (besan)
- 1 cup sour yogurt
- 8-10 curry leaves
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 2 cups water
- Salt to taste
- 4-6 idlis
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 2-3 dried red chilies
- 1/2 tsp fenugreek seeds
- 1/2 tsp asafoetida (hing)
- 2-3 green chilies, slit
- 2 cups mixed vegetables (okra, drumsticks, potatoes, etc.)
- 2 tbsp chopped cilantro for garnish
Instructions
- In a bowl, mix gram flour, yogurt, turmeric powder, red chili powder, cumin seeds, curry leaves, and water. Whisk until smooth.
- Heat oil in a pan, add mustard seeds, dried red chilies, fenugreek seeds, asafoetida, and green chilies. Sauté for a minute.
- Add the mixed vegetables and sauté for 2-3 minutes.
- Pour in the gram flour mixture, add salt, and bring to a boil. Simmer for 15-20 minutes until the vegetables are cooked and the kadhi thickens.
- Cut the idlis into quarters and add them to the kadhi. Simmer for another 5 minutes.
- Garnish with chopped cilantro and serve hot.
