Sindhi Kadhi Khichdi

Ingredients

  • 1 cup basmati rice
  • 1/2 cup split yellow lentils (moong dal)
  • 1 cup plain yogurt
  • 2 tbsp gram flour (besan)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 2-3 dried red chilies
  • 8-10 curry leaves
  • 2 tbsp oil
  • Salt to taste
  • 4 cups water
  • Fresh cilantro for garnish

Instructions

  1. Wash the rice and lentils, then soak them in water for 30 minutes.
  2. In a bowl, whisk together the yogurt, gram flour, turmeric, and red chili powder. Set aside.
  3. Heat oil in a large pot, add fenugreek seeds, cumin seeds, mustard seeds, dried red chilies, and curry leaves. Sauté until the seeds crackle.
  4. Add the yogurt mixture to the pot and cook on low heat, stirring constantly, until it comes to a boil. Then, add 4 cups of water and salt. Let it simmer for 15-20 minutes, stirring occasionally.
  5. In a separate pot, bring 4 cups of water to a boil. Drain the soaked rice and lentils, then add them to the boiling water. Cook until the rice and lentils are soft and fully cooked.
  6. Serve the Sindhi Kadhi hot with the Khichdi, garnished with fresh cilantro.
