Sindhi Kadhi Khichdi
Sindhi Kadhi Khichdi is a traditional dish from the Sindhi cuisine, known for its tangy and flavorful taste. This comforting meal consists of a tangy yogurt-based curry served with a side of rice and lentils, making it a perfect combination of flavors and textures.
Ingredients
- 1 cup basmati rice
- 1/2 cup split yellow lentils (moong dal)
- 1 cup plain yogurt
- 2 tbsp gram flour (besan)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp fenugreek seeds
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 2-3 dried red chilies
- 8-10 curry leaves
- 2 tbsp oil
- Salt to taste
- 4 cups water
- Fresh cilantro for garnish
Instructions
- Wash the rice and lentils, then soak them in water for 30 minutes.
- In a bowl, whisk together the yogurt, gram flour, turmeric, and red chili powder. Set aside.
- Heat oil in a large pot, add fenugreek seeds, cumin seeds, mustard seeds, dried red chilies, and curry leaves. Sauté until the seeds crackle.
- Add the yogurt mixture to the pot and cook on low heat, stirring constantly, until it comes to a boil. Then, add 4 cups of water and salt. Let it simmer for 15-20 minutes, stirring occasionally.
- In a separate pot, bring 4 cups of water to a boil. Drain the soaked rice and lentils, then add them to the boiling water. Cook until the rice and lentils are soft and fully cooked.
- Serve the Sindhi Kadhi hot with the Khichdi, garnished with fresh cilantro.
