Sindhi Kadhi Poha

Ingredients

  • 1 cup poha (flattened rice)
  • 1 cup yogurt
  • 2 tbsp gram flour (besan)
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 green chili, chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 8-10 curry leaves
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the poha in a colander under running water and set aside to drain.
  2. In a bowl, whisk together the yogurt and gram flour until smooth. Add 2 cups of water and mix well to make the kadhi mixture.
  3. Heat oil in a pan and add cumin seeds, mustard seeds, and curry leaves. Sauté until the seeds crackle.
  4. Add chopped onion, green chili, and tomato. Cook until the tomatoes are soft.
  5. Pour the kadhi mixture into the pan and add turmeric powder, red chili powder, and salt. Bring to a boil, then reduce the heat and simmer for 10-12 minutes.
  6. Once the kadhi is cooked, add the rinsed poha to the pan and mix gently. Cook for another 2-3 minutes until the poha is heated through.
  7. Garnish with fresh coriander leaves and serve hot.
