Sindhi Kadhi Vermicelli
Sindhi Kadhi Vermicelli is a traditional dish from the Sindhi Cuisine that combines the tangy flavors of kadhi with the comforting texture of vermicelli. This dish is a perfect blend of spices and sourness, making it a delightful meal for any occasion.
Ingredients
- 1 cup vermicelli
- 2 cups yogurt
- 2 tbsp gram flour (besan)
- 1 onion, finely chopped
- 1 tomato, chopped
- 1 green chili, chopped
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/4 tsp asafoetida (hing)
- 2-3 curry leaves
- 2-3 cups water
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds, mustard seeds, and asafoetida. Let them splutter.
- Add chopped onion, green chili, and curry leaves. Sauté until the onion turns golden brown.
- Add chopped tomato and cook until it turns soft.
- In a bowl, whisk yogurt, gram flour, turmeric powder, red chili powder, and salt. Add this mixture to the pan and stir continuously.
- Add water and let the kadhi simmer for 15-20 minutes.
- In a separate pan, dry roast vermicelli until it turns golden brown.
- Cook the roasted vermicelli in boiling water until it becomes soft. Drain and keep aside.
- Add the cooked vermicelli to the kadhi and mix well. Let it simmer for another 5-7 minutes.
- Garnish with fresh coriander leaves and serve hot.
