Sindhi Kadhi Vermicelli

Ingredients

  • 1 cup vermicelli
  • 2 cups yogurt
  • 2 tbsp gram flour (besan)
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 green chili, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/4 tsp asafoetida (hing)
  • 2-3 curry leaves
  • 2-3 cups water
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds, mustard seeds, and asafoetida. Let them splutter.
  2. Add chopped onion, green chili, and curry leaves. Sauté until the onion turns golden brown.
  3. Add chopped tomato and cook until it turns soft.
  4. In a bowl, whisk yogurt, gram flour, turmeric powder, red chili powder, and salt. Add this mixture to the pan and stir continuously.
  5. Add water and let the kadhi simmer for 15-20 minutes.
  6. In a separate pan, dry roast vermicelli until it turns golden brown.
  7. Cook the roasted vermicelli in boiling water until it becomes soft. Drain and keep aside.
  8. Add the cooked vermicelli to the kadhi and mix well. Let it simmer for another 5-7 minutes.
  9. Garnish with fresh coriander leaves and serve hot.
