Sindhi Kadi (سندھی کڑی)

Ingredients

  • 1 cup gram flour (besan)
  • 2 cups plain yogurt
  • 4 cups water
  • 1 onion, sliced
  • 1 potato, diced
  • 1/2 cup okra, sliced
  • 1/2 cup drumsticks (moringa), cut into 2-inch pieces
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 2-3 green chilies, slit
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, mix gram flour and yogurt to make a smooth paste.
  2. Heat oil in a pot and add cumin seeds, mustard seeds, and sliced onion. Sauté until the onion is golden brown.
  3. Add turmeric powder, red chili powder, and green chilies. Sauté for a minute.
  4. Pour in the gram flour and yogurt mixture. Add water and stir well.
  5. Add potatoes, okra, and drumsticks. Season with salt.
  6. Cover and cook on medium heat for 20-25 minutes or until the vegetables are tender.
  7. Garnish with fresh coriander leaves before serving.
